These super easy and quick pickled red onions are a fabulous condiment on hand that can add extra flavour, texture, colour and nutrients to almost any meal. Use to top a salad, a Buddha bowl, a soup or stew and are delicious in a wrap or pitta.
Red onions contain quercitin, a flavonoid that acts as an antioxidant in the body, protecting cells from damage. Quercitin also inhibits the release of histamine, which can be helpful if you experience food intolerances or allergies, as it is high histamine levels that can cause a stuffy nose and headaches, amongst other symptoms.
Red onions are a good source of fibre and are rich in vitamins B6, which is necessary for energy production, and vitamin C, another antioxidant that also helps with iron absorption. Red onions are also great for gut health due to their antimicrobial properties, helping to balance gut bacteria and protecting against the growth of harmful bacteria.
Ingredients
2-3 Red Onions finely sliced
1 garlic clove thinly sliced
1 tsp peppercorns
3/4 cup of vinegar – white or apple cider vinegar will work
1/2 cup of hot water
1tbsp of maple or date syrup
1 tsp sea salt
Instructions
Place the red onions, garlic, and pepper corns into a jar that you can seal airtight.
Combine the liquid ingredients in a jug.
Pour into the jar and then close the lid and shake gently to mix.
Leave the jar at room temperature for a day or overnight and then store in the fridge.
